COLOUR - Pale straw with hints of green.
AROMATICS - Intense, fresh fruity aroma featuring green apple, pineapple and lime.
PALATE - Crisp and clean with great balance of fresh flavours, zippy acid, hints of sweetness and undefinable presence on the palate. Several batches of fruit at different ripeness levels were fermented with a couple of classic old yeasts to create components showing a range of textures and flavour profiles encompassing the spectrum from crisp green apple to broader ripe tropical flavours. A dash of lemony Semillon juice completes the package, providing a finish that is just off-dry to balance the acid zing.
